Ingredients
  

Salad Ingredients
  • 2 medium cucumbers sliced thinly
  • 1 cup carrots julienned
  • 1/4 cup green onions sliced
  • 1/4 cup cilantro chopped
Dressing Ingredients
  • 3 tablespoons rice vinegar
  • 2 tablespoons sesame oil
  • 1 tablespoon soy sauce low sodium preferred
  • 1 teaspoon sugar optional
  • 1 teaspoon sesame seeds for garnish

Method
 

Prepare the Vegetables
  1. Slice the cucumbers thinly and place them in a mixing bowl.
  2. Julienne the carrots and add them to the bowl along with the sliced green onions and chopped cilantro.
Make the Dressing
  1. In a separate bowl, whisk together the rice vinegar, sesame oil, soy sauce, and sugar until well combined.
Combine and Serve
  1. Pour the dressing over the salad ingredients and toss to coat evenly.
  2. Sprinkle with sesame seeds before serving.
