Ingredients
  

Pasta
  • 12 oz Penne pasta or any pasta of choice
Feta and Vegetables
  • 1 block Feta cheese about 8 oz
  • 2 cups Cherry tomatoes halved
  • 1/4 cup Olive oil extra virgin
  • 1 tsp Dried oregano
  • 1 tsp Salt to taste
  • 1/2 tsp Black pepper to taste
Fresh Herbs
  • 1/4 cup Fresh basil chopped, for garnish

Method
 

Prepare the Pasta
  1. Preheat the oven to 400°F (200°C).
  2. Cook the pasta according to package instructions until al dente. Drain and set aside.
Bake the Feta and Tomatoes
  1. In a baking dish, combine the cherry tomatoes, feta cheese, olive oil, oregano, salt, and pepper.
  2. Bake in the preheated oven for 25-30 minutes, until the tomatoes are blistered and the feta is soft.
Combine and Serve
  1. Remove the baking dish from the oven and stir the feta and tomatoes together to create a creamy sauce.
  2. Add the cooked pasta to the baking dish and toss to combine.
  3. Garnish with fresh basil before serving.
