Vegetables
  • 2 medium zucchini sliced
  • 4 cups fresh spinach washed and chopped
  • 1 medium onion chopped
Dairy
  • 1 cup feta cheese crumbled
  • 1 cup milk or plant-based alternative
  • 2 large eggs
Seasoning
  • 1 teaspoon dried oregano
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
Others
  • 1 tablespoon olive oil for greasing the baking dish

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C). Grease a baking dish with olive oil.
  2. In a mixing bowl, combine the eggs, milk, oregano, salt, and pepper. Whisk until well combined.
Assembly
  1. Layer the sliced zucchini at the bottom of the greased baking dish.
  2. Spread the chopped spinach and onion evenly over the zucchini.
  3. Pour the egg mixture over the layered vegetables, then sprinkle the crumbled feta cheese on top.
Baking
  1. Bake in the preheated oven for 30 minutes, or until the top is golden and the vegetables are tender.
  2. Remove from the oven and let it cool for a few minutes before slicing and serving.
