Step-by-Step Instructions
- Prep the Oven & Springform Pan: Preheat your oven to 325°F (163°C). Lightly grease a 9-inch springform pan and line the bottom with parchment paper. Wrap the outside bottom and sides of the pan tightly with 2–3 layers of heavy-duty aluminum foil (or a silicone baking sleeve) to create a leakproof water barrier.
- Bake the Crust: In a medium bowl, combine graham cracker crumbs, sugar, cinnamon, and melted butter. Press the crumb mixture firmly and evenly into the bottom and 1 inch up the sides of the prepared springform pan. Bake at 325°F for 10 minutes, then remove and allow to cool on a wire rack while preparing fillings.
- Make the Vanilla Cheesecake Base: In a large stand mixer fitted with the paddle attachment (or using an electric hand mixer), beat the softened cream cheese and sugar on medium-low speed for 2–3 minutes until completely smooth and lump-free. Add the sour cream, vanilla extract, and flour. Beat on low until incorporated.
- Add the Eggs Gently: Add eggs one at a time, mixing on LOW speed just until each egg yolk is incorporated. Do not overmix or whip air into the batter.
- Make the Spiced Pumpkin Batter: Scoop out 1 1/2 cups of the vanilla cheesecake batter and transfer to a separate bowl. Whisk in the pure pumpkin puree, brown sugar, cinnamon, ginger, nutmeg, and cloves until velvety and golden-orange.
- Layer & Marble Swirl: Pour approximately half of the vanilla cheesecake batter over the cooled crust. Dollop spoonfuls of the spiced pumpkin batter over top. Pour the remaining vanilla batter over, and finish with dollops of remaining pumpkin batter. Take a thin wooden skewer or butter knife and gently drag through the batters in figure-eight motions to create a gorgeous marbled swirl pattern.
- Water Bath Bake: Place the foil-wrapped springform pan into a large roasting pan. Pour boiling hot water into the roasting pan until it reaches halfway up the sides of the springform pan. Carefully slide into the preheated oven and bake at 325°F for 60 to 70 minutes, until edges are set but the center 2 inches still jiggles slightly like set gelatin.
- Gentle Cool & Chill: Turn off the oven, crack open the oven door 2–3 inches, and let the cheesecake rest inside for 1 hour (this gradual temperature drop prevents cracking). Transfer to a wire rack to cool completely to room temperature, then cover loosely and refrigerate for at least 6 hours (preferably overnight). Slice with a warm knife, garnish with whipped cream and caramel, and enjoy!

Notes
Chef Secrets: 1. Room temperature ingredients are crucial: cream cheese, eggs, and sour cream must be at true room temperature (70°F) to blend seamlessly without lumps. 2. Do not overmix after adding eggs: beat at low speed just until combined to prevent incorporating excess air, which causes cracking during cooling. 3. Slow, gentle cooling: leave the cheesecake in the turned-off oven with the door cracked open for 1 hour after baking, then cool at room temperature before chilling for at least 6 hours.
