Ingredients
  

Berries
  • 2 cups mixed berries (strawberries, blueberries, raspberries) fresh or frozen
Shortcake
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1 tbsp sugar
  • 1/4 cup unsalted butter cold and cubed
  • 1/4 cup milk or cream
  • 1 tsp vanilla extract
Crumble Topping
  • 1/2 cup oats rolled
  • 1/2 cup brown sugar
  • 1/4 cup all-purpose flour
  • 1/4 cup unsalted butter melted
  • 1/2 tsp cinnamon

Method
 

Prepare the Berries
  1. In a mixing bowl, combine the mixed berries with a tablespoon of sugar. Set aside to macerate for about 10 minutes.
Make the Shortcake
  1. Preheat the oven to 350°F (175°C). In a bowl, whisk together the flour, baking powder, and sugar.
  2. Add the cold butter and mix until crumbly. Stir in the milk and vanilla until just combined.
  3. Spread the shortcake mixture into a greased baking dish.
Prepare the Crumble Topping
  1. In a separate bowl, mix together the oats, brown sugar, flour, melted butter, and cinnamon until crumbly.
  2. Sprinkle the crumble topping over the shortcake mixture.
Bake
  1. Bake in the preheated oven for 25-30 minutes, or until the topping is golden brown and the shortcake is cooked through.
  2. Let cool slightly before serving with the macerated berries on top.
