Ingredients
  

Ice Cream Base
  • 1 cup heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 8 ounces cream cheese softened
  • 1/4 cup lemon juice freshly squeezed
  • 1 tablespoon lemon zest fresh
Blueberry Swirl
  • 1 cup fresh blueberries
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice freshly squeezed

Method
 

Prepare Ice Cream Base
  1. In a mixing bowl, whisk together the heavy cream, whole milk, sugar, vanilla extract, cream cheese, lemon juice, and lemon zest until smooth and well combined.
  2. Chill the mixture in the refrigerator for at least 2 hours or until completely cold.
Make Blueberry Swirl
  1. In a small saucepan, combine the fresh blueberries, sugar, and lemon juice. Cook over medium heat until the blueberries burst and the mixture thickens, about 5-7 minutes.
  2. Remove from heat and let cool completely.
Churn Ice Cream
  1. Pour the chilled ice cream base into the ice cream maker and churn according to the manufacturer's instructions.
  2. Once the ice cream is thickened, gently fold in the blueberry swirl, creating a marbled effect.
Freeze
  1. Transfer the ice cream to an airtight container and freeze for at least 2 hours or until firm.
