Ingredients
  

Filling
  • 2 cups blueberries fresh or frozen
  • 2 cups peaches sliced, fresh or frozen
  • 1/4 cup granulated sugar adjust based on sweetness of fruit
  • 1 tablespoon lemon juice freshly squeezed
  • 1 tablespoon cornstarch for thickening
Crisp Topping
  • 1 cup old-fashioned oats
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar packed
  • 1/2 teaspoon cinnamon
  • 1/4 cup unsalted butter melted

Method
 

Prepare the Filling
  1. Preheat the oven to 350°F (175°C). In a mixing bowl, combine the blueberries, sliced peaches, granulated sugar, lemon juice, and cornstarch. Toss gently to coat the fruit evenly.
Make the Crisp Topping
  1. In another bowl, mix together the oats, flour, brown sugar, and cinnamon. Stir in the melted butter until the mixture is crumbly.
Assemble and Bake
  1. Spread the fruit mixture evenly in a baking dish. Sprinkle the crisp topping over the fruit. Bake in the preheated oven for 30 minutes or until the topping is golden brown and the fruit is bubbly.
Serve
  1. Let cool slightly before serving. Enjoy warm, optionally with vanilla ice cream.
