Ingredients
  

Dry Ingredients
  • 1 cup oats blended into flour
  • 1 scoop protein powder vanilla or unflavored
  • 1 tbsp baking powder
  • 1/2 tsp salt
Wet Ingredients
  • 1 cup milk dairy or non-dairy
  • 1 large egg
  • 1 tbsp honey or maple syrup
  • 1 tsp vanilla extract
Add-ins
  • 1 cup fresh blueberries or frozen

Method
 

Prepare the Batter
  1. In a mixing bowl, combine the blended oats, protein powder, baking powder, and salt.
  2. In another bowl, whisk together the milk, egg, honey, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the blueberries.
Cook the Pancakes
  1. Preheat a griddle over medium heat and lightly grease it.
  2. Pour 1/4 cup of batter onto the griddle for each pancake.
  3. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook for another 2-3 minutes until golden brown.
Serve
  1. Serve warm with additional blueberries and syrup if desired.

Notes

For a vegan version, substitute the egg with a flax egg and use plant-based milk.
