Ingredients
  

Slaw Ingredients
  • 4 cups shredded green cabbage
  • 1 medium apple, cored and thinly sliced preferably a sweet variety like Fuji or Honeycrisp
  • 1 cup crumbled feta cheese
  • 1/4 cup fresh parsley, chopped optional for garnish
Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon honey or maple syrup for a vegan option
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste

Method
 

Prepare the Slaw
  1. In a large mixing bowl, combine the shredded cabbage, sliced apple, crumbled feta, and parsley.
Make the Dressing
  1. In a small bowl, whisk together the olive oil, apple cider vinegar, honey, salt, and pepper until well combined.
Combine
  1. Pour the dressing over the cabbage mixture and toss well to combine. Adjust seasoning if necessary.
  2. Serve immediately or refrigerate for up to an hour to allow flavors to meld.
