Ingredients
  

Vegetables
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 medium carrot diced
  • 1 medium celery stalk diced
  • 4 cups green cabbage shredded
Beans and Broth
  • 2 cans white beans drained and rinsed
  • 4 cups vegetable broth
  • 1 cup water
Herbs and Spices
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • to taste salt
  • to taste black pepper
Finishing Touches
  • 2 tablespoons olive oil for sautéing
  • 1 tablespoon lemon juice freshly squeezed

Method
 

Prepare the Vegetables
  1. Heat olive oil in a large pot over medium heat. Add onion, carrot, and celery. Sauté until softened, about 5 minutes.
  2. Add garlic and sauté for another minute until fragrant.
Cook the Soup
  1. Stir in the shredded cabbage, vegetable broth, water, white beans, thyme, oregano, bay leaf, salt, and pepper.
  2. Bring to a boil, then reduce heat and simmer for 25-30 minutes, until the cabbage is tender.
Finish and Serve
  1. Remove the bay leaf, stir in lemon juice, and adjust seasoning if necessary. Serve hot.
