Ingredients
  

Vegetables
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 4 cups cabbage shredded
  • 2 medium carrots sliced
  • 1 stalk celery sliced
Beans and Broth
  • 2 cans white beans drained and rinsed
  • 4 cups vegetable broth
  • 1 cup water
Seasonings
  • 1 teaspoon thyme dried
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
Finishing Touches
  • 2 tablespoons olive oil for sautéing
  • 1 tablespoon lemon juice freshly squeezed

Method
 

Prepare the Vegetables
  1. Heat olive oil in a large pot over medium heat. Add diced onion, garlic, carrots, and celery. Sauté until softened, about 5 minutes.
  2. Add shredded cabbage and cook for another 5 minutes, stirring occasionally.
Cook the Soup
  1. Stir in the white beans, vegetable broth, water, thyme, bay leaf, salt, and pepper.
  2. Bring to a boil, then reduce heat and simmer for 20 minutes, allowing the flavors to meld.
Finish and Serve
  1. Remove the bay leaf and stir in lemon juice before serving. Adjust seasoning if necessary.
  2. Serve hot, garnished with fresh herbs if desired.
