Ingredients
  

Cauliflower
  • 1 head Cauliflower cut into florets
  • 2 tablespoons Olive Oil for roasting
  • 1 teaspoon Paprika
  • 1 teaspoon Cumin
  • 1 teaspoon Garlic Powder
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper
Toppings
  • 1 cup Cucumber diced
  • 1 cup Tomatoes diced
  • 1/2 cup Red Onion thinly sliced
  • 1 cup Tzatziki Sauce for serving
  • 4 pieces Pita Bread for serving

Method
 

Prepare the Cauliflower
  1. Preheat the oven to 425°F (220°C).
  2. In a mixing bowl, combine the cauliflower florets with olive oil, paprika, cumin, garlic powder, salt, and black pepper.
  3. Spread the seasoned cauliflower on a baking sheet in a single layer.
  4. Roast in the preheated oven for 25-30 minutes, or until golden brown and tender, stirring halfway through.
Assemble the Gyros
  1. Warm the pita bread in the oven for a few minutes.
  2. Fill each pita with roasted cauliflower, diced cucumber, tomatoes, and red onion.
  3. Top with tzatziki sauce and serve immediately.
