Ingredients
  

For the Cherry Filling
  • 4 cups fresh cherries, pitted
  • 1 cup granulated sugar adjust based on sweetness of cherries
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
For the Crisp Topping
  • 1 cup old-fashioned oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar packed
  • 1/2 cup unsalted butter melted
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
For Serving
  • 4 scoops vanilla ice cream

Method
 

Prepare the Cherry Filling
  1. Preheat the oven to 350°F (175°C). In a mixing bowl, combine the pitted cherries, granulated sugar, cornstarch, vanilla extract, and lemon juice. Toss to coat the cherries evenly.
Make the Crisp Topping
  1. In another mixing bowl, combine the oats, flour, brown sugar, melted butter, cinnamon, and salt. Mix until crumbly.
Assemble and Bake
  1. Pour the cherry mixture into a baking dish and spread the crisp topping evenly over the cherries. Bake in the preheated oven for 30 minutes or until the topping is golden brown and the cherries are bubbling.
Serve
  1. Remove from the oven and let cool slightly. Serve warm with a scoop of vanilla ice cream on top.

Notes

For best results, use fresh, ripe cherries. You can substitute frozen cherries if fresh ones are not available; just make sure to thaw and drain excess liquid.
