Ingredients

Chicken Marinade
  • 1 pound boneless chicken breast cut into 1-inch cubes
  • 2 tablespoons olive oil for marinade
  • 2 tablespoons soy sauce for flavor
  • 1 tablespoon honey for sweetness
  • 2 cloves garlic minced
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 lemon juice freshly squeezed
Vegetables (optional)
  • 1 bell pepper cut into chunks any color
  • 1 onion cut into chunks preferably red
  • 1 zucchini sliced

Method

Prepare the Marinade
  1. In a mixing bowl, combine olive oil, soy sauce, honey, minced garlic, paprika, cumin, salt, black pepper, and lemon juice. Mix well.
Marinate the Chicken
  1. Add the chicken cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
Prepare the Skewers
  1. If using wooden skewers, soak them in water for 30 minutes to prevent burning. Thread the marinated chicken and optional vegetables onto the skewers.
Grill the Skewers
  1. Preheat the grill to medium-high heat. Grill the skewers for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
Serve
  1. Remove the skewers from the grill and let them rest for a few minutes before serving. Enjoy with your favorite dipping sauce or side.
