Ingredients
  

Dry Ingredients
  • 1 cup All-purpose flour
  • 1/2 cup Granulated sugar
  • 1/3 cup Unsweetened cocoa powder
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Baking soda
  • 1/4 teaspoon Salt
Wet Ingredients
  • 1 large Egg
  • 1/2 cup Milk
  • 1/4 cup Vegetable oil
  • 1 teaspoon Vanilla extract
Add-ins
  • 1 cup Fresh or frozen cherries, pitted and chopped
  • 1/2 cup Chocolate chips Semi-sweet or dark

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a muffin tin or line with muffin liners.
  2. In a large mixing bowl, whisk together the dry ingredients: flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, mix the wet ingredients: egg, milk, vegetable oil, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. Gently fold in the chopped cherries and chocolate chips.
Baking
  1. Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  2. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  3. Allow the muffins to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
