Ingredients
  

Pasta
  • 2 cups elbow macaroni uncooked
Vegetables
  • 1 cup dill pickles chopped
  • 1/2 cup red onion finely chopped
  • 1/2 cup celery finely chopped
Dressing
  • 1 cup mayonnaise
  • 2 tablespoons dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon dill weed dried
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper freshly ground

Method
 

Cook the Pasta
  1. Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and rinse under cold water.
Prepare the Salad
  1. In a large mixing bowl, combine the cooked macaroni, chopped dill pickles, red onion, and celery.
Make the Dressing
  1. In a separate bowl, whisk together the mayonnaise, dijon mustard, apple cider vinegar, dill weed, salt, and black pepper until smooth.
Combine
  1. Pour the dressing over the macaroni salad and mix until well combined. Adjust seasoning if necessary.
Chill and Serve
  1. Cover the salad and refrigerate for at least 30 minutes before serving to allow flavors to meld.
