Ingredients
  

Cilantro-Lime Rice
  • 1 cup white rice uncooked
  • 2 cups water
  • 1 tablespoon lime juice
  • 1 tablespoon fresh cilantro chopped
  • 1 teaspoon salt
Protein
  • 1 pound chicken breast or tofu for vegetarian option
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
Toppings
  • 1 cup black beans canned, drained and rinsed
  • 1 cup corn canned or frozen
  • 1 cup fresh salsa
  • 1 cup shredded cheese cheddar or Monterey Jack
  • 1 cup sour cream or Greek yogurt
  • 1 avocado sliced
Dressing
  • 1 tablespoon lime juice
  • 1 tablespoon olive oil
  • 1 teaspoon honey optional
  • 1 teaspoon salt
  • 1 teaspoon pepper

Method
 

Prepare the Rice
  1. Rinse the rice under cold water until the water runs clear. In a rice cooker, combine the rice, water, and salt. Cook according to the rice cooker instructions.
  2. Once cooked, fluff the rice with a fork and stir in lime juice and chopped cilantro. Set aside.
Cook the Protein
  1. In a skillet, heat olive oil over medium heat. Season the chicken (or tofu) with chili powder, cumin, garlic powder, salt, and pepper.
  2. Cook the chicken for 6-7 minutes on each side, or until fully cooked. Remove from heat and let rest before slicing.
Assemble the Bowls
  1. In serving bowls, layer cilantro-lime rice, sliced protein, black beans, corn, salsa, cheese, sour cream, and avocado.
  2. Drizzle with dressing made from lime juice, olive oil, honey, salt, and pepper.
