Ingredients
  

Gnocchi
  • 1 pound potato gnocchi store-bought or homemade
Vegetables
  • 1 cup fresh peas or frozen
  • 1 cup baby spinach optional
Sauce
  • 2 tablespoons olive oil for frying
  • 2 cloves garlic minced
  • 1 lemon zest
  • 2 tablespoons lemon juice freshly squeezed
  • 1/4 cup parmesan cheese grated
  • to taste salt
  • to taste black pepper

Method
 

Prepare the Gnocchi
  1. Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions until they float to the surface. Drain and set aside.
Cook the Gnocchi
  1. In a large skillet, heat olive oil over medium-high heat. Add the cooked gnocchi and cook until golden and crispy, about 5-7 minutes, stirring occasionally.
Add Vegetables and Sauce
  1. Add minced garlic and fresh peas to the skillet. Cook for an additional 2-3 minutes until the peas are tender.
  2. Stir in lemon zest, lemon juice, and season with salt and pepper. Toss to combine.
  3. Remove from heat and sprinkle with grated parmesan cheese.
Serve
  1. Serve immediately, garnished with additional parmesan and a squeeze of lemon if desired.
