Step-by-Step Instructions
- Prepare Herb Butter: In a small bowl, blend softened salted butter with finely chopped fresh thyme and a pinch of flaky sea salt until smooth and spreadable.
- Butter the Bread: Generously spread the thyme butter onto one side of each sourdough bread slice. These buttered sides will form the crispy exterior crust.
- Layer Fig Spread & Cheeses: Place two slices buttered-side down on a clean board. Spread 1.5 tablespoons of fig jam evenly over each slice. Sprinkle half of the shredded white cheddar and fontina cheese evenly across both slices.
- Add Apple & Greens: Neatly arrange the thinly sliced Honeycrisp apples in an overlapping shingle over the cheese. Top with caramelized onions (if using) and a light handful of fresh baby arugula. Season with a crack of black pepper.
- Top with More Cheese & Close: Distribute the remaining shredded white cheddar and fontina on top of the greens (this locks the sandwich together). Top with the remaining sourdough slices, buttered-side facing UP.
- Low & Slow Skillet Sear: Heat a heavy 12-inch cast iron skillet or griddle over medium-low heat. Place the sandwiches into the warm pan. Cook gently for 4 to 5 minutes undisturbed, until the bottom crust is deeply golden brown and crisp. Carefully flip with a wide spatula and grill the second side for another 3 to 4 minutes until both sides are crunchy and the cheese is fully melted and bubbling at the edges.
- Slice & Serve Hot: Transfer to a cutting board and let rest for 60 seconds so the molten cheese sets slightly. Slice diagonally with a sharp serrated knife and serve immediately while hot and gooey!

Notes
Chef Secret: Always sandwich the apple slices and arugula between two layers of shredded cheese (bottom and top). The melted cheese acts as culinary mortar that binds the sourdough bread together and prevents the crisp apples from sliding out when sliced!
