Ingredients

  • 1 lb boneless, skinless chicken thighs
  • 2 cans hominy drained and rinsed
  • 4 cups chicken broth
  • 1 cup green salsa such as tomatillo salsa
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 1 tbsp ground cumin
  • 1 tbsp dried oregano
  • 1 tsp salt to taste
  • 1 tsp black pepper to taste
  • 1 cup fresh cilantro chopped, for garnish
  • 1 lime juiced for serving

Method
 

Cooking Instructions
  1. Place the chicken thighs at the bottom of the crockpot.
  2. Add the hominy, chicken broth, green salsa, onion, garlic, cumin, oregano, salt, and pepper on top of the chicken.
  3. Stir to combine all ingredients.
  4. Cover and cook on low for 8 hours or high for 4 hours.
  5. Once cooked, shred the chicken with two forks and stir back into the soup.
  6. Serve hot, garnished with fresh cilantro and a squeeze of lime juice.
