- In the bowl of a stand mixer fitted with the dough hook attachment, combine all of the dough ingredients and knead on medium low speed for about 5 minutes until a cohesive ball forms.
- Place the dough in a lightly greased bowl, cover, and refrigerate overnight (8-12 hours).
- The next day, remove the dough from the fridge and let it rise at room temperature for about 30 minutes.
- Lightly punch down the dough and turn it out onto a floured surface. Roll the dough into a rectangle about ½ inch thick.
- Cut out heart shapes using a 3-inch heart shaped cookie cutter, and use a smaller heart cutter for the centers. Reroll scraps to cut additional donuts.
- Heat 2-4 cups of vegetable oil in a large pot or Dutch oven to 375°F.
- Fry 3-4 donuts at a time for 1 minute on each side until golden brown. Drain excess oil on a cooling rack.
- For solid heart donuts, roll in granulated sugar while warm and allow to cool.
- For filled donuts, fill a piping bag with strawberry jam, poke a hole in the top of each donut, and fill with jam.
- For glazed donuts, whisk together powdered sugar, melted butter, and vanilla. Gradually mix in milk to reach desired consistency and add food coloring if desired.
- Dip heart donuts into the glaze and place on a cooling rack. Sprinkle with Valentine's sprinkles immediately.
