Ingredients

  • 4 cups all purpose flour
  • 0.5 cup granulated sugar for the dough
  • 1 cup whole milk
  • 0.5 cup unsalted butter melted
  • 1 large egg room temperature
  • 1 teaspoon vanilla extract
  • 2 teaspoons instant yeast
  • 0.5 teaspoon kosher salt
  • 0.5 cup granulated sugar for rolling
  • 0.5 cup strawberry jam for filling
  • 1 cup powdered sugar
  • 1 tablespoon unsalted butter melted for glaze
  • 0.5 teaspoon vanilla extract for glaze
  • 2-4 tablespoons milk as needed for glaze consistency
  • 1-2 drops pink gel food coloring optional
  • Valentine's sprinkles

Equipment

  • Stand Mixer
  • Dough cutter
  • Dutch oven
  • Piping Bag

Method

  1. In the bowl of a stand mixer fitted with the dough hook attachment, combine all of the dough ingredients and knead on medium low speed for about 5 minutes until a cohesive ball forms.
  2. Place the dough in a lightly greased bowl, cover, and refrigerate overnight (8-12 hours).
  3. The next day, remove the dough from the fridge and let it rise at room temperature for about 30 minutes.
  4. Lightly punch down the dough and turn it out onto a floured surface. Roll the dough into a rectangle about ½ inch thick.
  5. Cut out heart shapes using a 3-inch heart shaped cookie cutter, and use a smaller heart cutter for the centers. Reroll scraps to cut additional donuts.
  6. Heat 2-4 cups of vegetable oil in a large pot or Dutch oven to 375°F.
  7. Fry 3-4 donuts at a time for 1 minute on each side until golden brown. Drain excess oil on a cooling rack.
  8. For solid heart donuts, roll in granulated sugar while warm and allow to cool.
  9. For filled donuts, fill a piping bag with strawberry jam, poke a hole in the top of each donut, and fill with jam.
  10. For glazed donuts, whisk together powdered sugar, melted butter, and vanilla. Gradually mix in milk to reach desired consistency and add food coloring if desired.
  11. Dip heart donuts into the glaze and place on a cooling rack. Sprinkle with Valentine's sprinkles immediately.
