  • 1.5 cups Strawberries, Sliced for macerating
  • 0.5 cups Sugar for macerating
  • 24 small Strawberries, Stems removed, cut in half
  • 2 whole Strawberries, stems on, quartered lengthwise for garnish
  • 2 cups All-purpose Flour
  • 2 tablespoons Sugar
  • 1 tablespoon Baking Powder
  • 0.5 teaspoon Salt
  • 0.5 cups Cold Unsalted Butter, cubed kept cold
  • 0.67 cups Heavy Cream or Half and Half
  • 3 cups Sweetened whipped cream whipped to stiff peaks
  • Powdered Sugar for dusting

Method
 

  1. Macerate sliced strawberries with 0.5 cups sugar and set aside.
  2. Preheat oven to 375°F (190°C).
  3. In a bowl, combine flour, 2 tablespoons sugar, baking powder, and salt.
  4. Cut cold butter into the flour mixture until it resembles coarse crumbs.
  5. Stir in heavy cream until just combined.
  6. Turn dough onto a floured surface and knead gently.
  7. Roll out to desired thickness and cut into shortcake shapes.
  8. Bake shortcakes in the preheated oven for 15 minutes or until golden.
  9. Let shortcakes cool, then layer with macerated strawberries and whipped cream.
  10. Garnish with quartered strawberries and dust with powdered sugar.
