  • 2 cups fresh strawberries hulled and diced
  • 1 tablespoon sugar for macerating strawberries
  • 1 cup heavy whipping cream for whipping
  • 1 teaspoon vanilla extract
  • 3/4 cup sweetened condensed milk
Base
  • 2 cups shortbread cookies crushed
  • 2 tablespoons butter melted
Topping
  • 1/3 cup freeze dried strawberries for garnish

Method
 

Preparation
  1. In a bowl, combine the hulled and diced strawberries with sugar, and set aside to macerate.
  2. In another bowl, whip the heavy cream and vanilla extract until soft peaks form.
  3. Gently fold in the sweetened condensed milk to the whipped cream until well combined.
  4. In a separate bowl, crush the shortbread cookies and mix in the melted butter until combined.
  5. In a suitable dish, spread half of the crushed cookie mixture as the base.
  6. Layer half of the whipped cream mixture on top of the cookie base.
  7. Add half of the macerated strawberries on top of the whipped cream layer.
  8. Repeat the layering process with the remaining cookie mixture, whipped cream, and strawberries.
  9. Top with freeze dried strawberries.
  10. Freeze for at least 6 hours or until firm before slicing into bars.
