Ingredients
  

Base Ingredients
  • 2 cups Cashews Soaked in water for at least 4 hours
  • 1 cup Dragon Fruit Fresh or frozen, peeled and diced
  • 1/2 cup Coconut Milk Full-fat for creaminess
  • 1/4 cup Maple Syrup Adjust sweetness to taste
  • 1 teaspoon Vanilla Extract

Method
 

Prepare the Cashew Base
  1. Drain and rinse the soaked cashews. Place them in a blender along with coconut milk, maple syrup, and vanilla extract. Blend until smooth and creamy.
Add Dragon Fruit
  1. Add the diced dragon fruit to the blender and pulse a few times until just combined, leaving some small chunks for texture.
Chill the Mixture
  1. Transfer the mixture to a mixing bowl and refrigerate for at least 1 hour to chill.
Churn the Ice Cream
  1. Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.
Freeze
  1. Transfer the ice cream to a freezer-safe container and freeze for at least 3 hours or until firm.
