Ingredients
  

Cake Batter
  • 1 cup semisweet chocolate chips or chopped chocolate
  • 1/2 cup unsalted butter cut into pieces
  • 1 cup powdered sugar
  • 2 large eggs
  • 2 large egg yolks
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
Serving
  • 4 scoops vanilla ice cream for serving
  • 1 tablespoon chocolate sauce for drizzling
  • 1 tablespoon powdered sugar for dusting

Method
 

Prepare the Oven and Muffin Tin
  1. Preheat the oven to 425°F (220°C). Grease four muffin cups with butter and dust with flour.
Melt Chocolate and Butter
  1. In a mixing bowl, combine the chocolate chips and butter. Melt in the microwave in 30-second intervals, stirring until smooth.
Mix Batter
  1. Whisk in the powdered sugar until well combined. Add the eggs, egg yolks, and vanilla extract, whisking until smooth. Gently fold in the flour and salt until just combined.
Fill Muffin Tin
  1. Divide the batter evenly among the prepared muffin cups, filling each about 3/4 full.
Bake
  1. Bake in the preheated oven for 12-14 minutes, until the edges are firm but the center is still soft.
Serve
  1. Let the cakes cool for 1 minute, then carefully invert onto plates. Serve warm with a scoop of vanilla ice cream, drizzled with chocolate sauce and dusted with powdered sugar.
