Ingredients
  

Lamb
  • 4 pounds leg of lamb bone-in
Garlic Butter
  • 1 cup unsalted butter softened
  • 10 cloves garlic minced
  • 2 tablespoons fresh rosemary chopped
  • 2 tablespoons fresh thyme chopped
  • 1 teaspoon salt
  • 1 teaspoon black pepper
Vegetables
  • 4 carrots carrots peeled and cut into chunks
  • 2 pounds potatoes quartered
  • 1 large onion quartered

Method
 

Prepare the Lamb
  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix the softened butter, minced garlic, rosemary, thyme, salt, and pepper.
  3. Rub the garlic butter mixture all over the leg of lamb, ensuring it is well coated.
Roast the Lamb
  1. Place the lamb in a roasting pan and surround it with carrots, potatoes, and onion.
  2. Roast in the preheated oven for about 90 minutes, or until the internal temperature reaches 135°F (57°C) for medium-rare.
  3. Baste the lamb with the pan juices every 30 minutes.
  4. Remove from the oven and let it rest for 15 minutes before slicing.
