Ingredients
  

Chicken and Vegetables
  • 2 cups cooked chicken, shredded
  • 1 cup bell peppers, sliced mixed colors
  • 1 cup onion, sliced
  • 1 tablespoon olive oil
  • 1 tablespoon fajita seasoning
Quesadilla Assembly
  • 4 large flour tortillas
  • 2 cups cheese, shredded cheddar or Mexican blend

Method
 

Prepare the Filling
  1. In a skillet, heat olive oil over medium heat. Add sliced bell peppers and onions, sauté until softened, about 5 minutes.
  2. Stir in the shredded chicken and fajita seasoning, cooking until heated through, about 3-4 minutes.
Assemble and Cook Quesadillas
  1. Place a tortilla in the skillet, sprinkle half with cheese, add a portion of the chicken and vegetable mixture, then top with more cheese and fold the tortilla in half.
  2. Cook until the tortilla is golden brown and the cheese is melted, about 3-4 minutes per side. Repeat with remaining tortillas.
Serve
  1. Cut the quesadillas into wedges and serve warm with salsa or sour cream.
