Ingredients
  

Base Ingredients
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups fresh tomatoes, chopped or 2 cans of diced tomatoes
  • 2 cups vegetable broth
  • 1 teaspoon sugar to balance acidity
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Herbs
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
Garnish
  • 1/4 cup fresh basil, chopped for serving
  • 1/4 cup heavy cream optional, for serving

Method
 

Cooking the Soup
  1. In a saucepan, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 5 minutes.
  2. Add minced garlic and cook for an additional minute until fragrant.
  3. Stir in the chopped tomatoes, vegetable broth, sugar, salt, black pepper, basil, and oregano. Bring to a boil.
  4. Reduce heat and let simmer for 20 minutes, stirring occasionally.
  5. Remove from heat and let cool slightly. Blend the soup until smooth using a blender.
  6. Return the blended soup to the saucepan and heat through. Adjust seasoning if necessary.
Serving
  1. Ladle the soup into bowls and garnish with fresh basil and a drizzle of heavy cream if desired.
