Ingredients
  

Stuffed Peppers
  • 4 pieces bell peppers any color
  • 1 pound ground beef 85% lean
  • 1 can black beans drained and rinsed
  • 1 cup corn frozen or canned
  • 1 cup salsa your favorite brand
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1 tablespoon taco seasoning store-bought or homemade
  • 1 tablespoon olive oil for cooking

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a skillet, heat olive oil over medium heat. Add ground beef and cook until browned.
  4. Stir in taco seasoning, black beans, corn, and salsa. Cook for an additional 5 minutes.
  5. Remove from heat and mix in half of the shredded cheese.
Stuffing and Baking
  1. Stuff each bell pepper with the beef mixture.
  2. Place the stuffed peppers in a baking dish and cover with foil.
  3. Bake in the preheated oven for 25 minutes.
  4. Remove the foil, sprinkle remaining cheese on top, and bake for an additional 5 minutes until cheese is melted.
  5. Let cool for a few minutes before serving.
