Father's Day Blueberry French Toast Bake

Ingredients
  

Bread and Blueberries
  • 8 slices bread preferably challah or brioche
  • 2 cups fresh blueberries
Egg Mixture
  • 4 large eggs
  • 2 cups milk whole or 2%
  • 1 tablespoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/4 cup maple syrup plus more for serving
Topping
  • 1/4 cup brown sugar packed
  • 1 tablespoon butter melted

Method
 

Prepare the Bake
  1. Preheat the oven to 350°F (175°C). Grease a 9x13 inch baking dish.
  2. Cut the bread into cubes and place half of them in the prepared baking dish. Sprinkle half of the blueberries on top.
  3. In a mixing bowl, whisk together the eggs, milk, vanilla extract, cinnamon, and maple syrup until well combined.
  4. Pour the egg mixture over the bread and blueberries. Top with the remaining bread cubes and blueberries.
  5. In a small bowl, mix together the brown sugar and melted butter. Sprinkle this mixture over the top of the casserole.
  6. Cover with foil and bake for 30 minutes. Remove the foil and bake for an additional 15 minutes, or until the top is golden brown.
Serve
  1. Let cool for a few minutes before slicing. Serve warm with additional maple syrup if desired.

Notes

This dish can be prepared the night before and refrigerated. Just add an extra 10-15 minutes to the baking time if baking from cold.
