Ingredients
  

Shrimp
  • 1 pound large shrimp peeled and deveined
Cajun Marinade
  • 2 tablespoons olive oil
  • 1 tablespoon Cajun seasoning store-bought or homemade
  • 2 cloves garlic minced
  • 1 tablespoon lemon juice freshly squeezed
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Vegetables
  • 1 bell pepper red cut into chunks
  • 1 bell pepper green cut into chunks
  • 1 medium red onion cut into chunks

Method
 

Prepare the Marinade
  1. In a mixing bowl, combine olive oil, Cajun seasoning, minced garlic, lemon juice, paprika, salt, and black pepper. Mix well.
Marinate the Shrimp
  1. Add the shrimp to the marinade and toss to coat. Let it marinate for at least 15 minutes.
Prepare the Skewers
  1. While the shrimp is marinating, soak wooden skewers in water for 10 minutes to prevent burning.
  2. Thread the marinated shrimp and vegetable chunks onto the skewers, alternating between shrimp and vegetables.
Grill the Skewers
  1. Preheat the grill to medium-high heat. Place the skewers on the grill and cook for about 2-3 minutes per side, or until the shrimp are opaque and cooked through.
Serve
  1. Remove the skewers from the grill and serve immediately with lemon wedges.
