A refreshing Middle Eastern salad made with mixed greens, vegetables, and crispy pita bread, dressed in a tangy sumac vinaigrette.

Ingredients
  

Salad Base
  • 4 cups mixed greens such as romaine and arugula
  • 1 cup cherry tomatoes halved
  • 1 cucumber cucumber diced
  • 1 cup radishes sliced
  • 1 bell pepper bell pepper diced
  • 1 cup green onions chopped
  • 1 cup parsley chopped
  • 1 cup mint leaves chopped
Pita Chips
  • 2 pieces pita bread cut into triangles
Dressing
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice freshly squeezed
  • 1 teaspoon sumac
  • 1 clove garlic minced
  • salt to taste salt
  • pepper to taste black pepper

Method
 

Prepare Pita Chips
  1. Preheat the oven to 375°F (190°C). Arrange the pita triangles on a baking sheet and brush with olive oil. Bake for about 10 minutes or until golden and crispy.
Make the Dressing
  1. In a small bowl, whisk together olive oil, lemon juice, sumac, minced garlic, salt, and black pepper until well combined.
Assemble the Salad
  1. In a large mixing bowl, combine mixed greens, cherry tomatoes, cucumber, radishes, bell pepper, green onions, parsley, and mint leaves.
  2. Drizzle the dressing over the salad and toss gently to combine.
  3. Top the salad with the crispy pita chips just before serving.
