Eggs
  • 8 large eggs fresh
Dairy
  • 1/4 cup milk whole or 2%
  • 2 tablespoons butter unsalted
Seasoning
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper freshly ground, to taste

Method
 

Prepare the Eggs
  1. Crack the eggs into a mixing bowl, add milk, salt, and pepper, and whisk until well combined and slightly frothy.
Cook the Eggs
  1. Heat a non-stick skillet over medium-low heat and add the butter. Allow it to melt and foam but not brown.
  2. Pour the egg mixture into the skillet and let it sit undisturbed for a few moments until the edges begin to set.
  3. Gently stir with a spatula, pushing the eggs from the edges towards the center. Continue to cook, stirring occasionally, until the eggs are softly set but still slightly runny.
Finish and Serve
  1. Remove the skillet from heat and let the residual heat finish cooking the eggs. Serve immediately.

Notes

For extra fluffiness, you can separate the egg whites and yolks, whip the whites until soft peaks form, then fold them back into the yolks before cooking.
