Pre-Cooking & Cooling the Apples
- Melt 1 tbsp butter in a small skillet over medium heat. Add the diced apples, 1 tbsp brown sugar, and 1 tsp cinnamon. Sauté for 4 to 5 minutes until apples are slightly softened and caramelized but still hold their shape.
- Transfer cooked apples to a shallow plate and place in the freezer for 10 minutes to chill completely before mixing into the dough (warm apples will melt the butter!).
Making the Scone Dough
- Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
- In a large mixing bowl, whisk together flour, 1/3 cup brown sugar, baking powder, kosher salt, 1/2 tsp cinnamon, and nutmeg.
- Add the cold cubed butter into the flour mixture. Using a pastry blender or clean fingertips, cut the butter into the flour until coarse pea-sized crumbs form with some butter flakes.
- In a separate measuring cup, whisk together the cold heavy cream, egg, and vanilla extract. Gently fold the chilled spiced apples into the dry flour mixture.
- Pour the wet cream mixture over the dry ingredients. Use a wooden spoon or silicone spatula to fold just until a shaggy, cohesive dough begins to clump together. Do not overmix!
Shaping, Chilling & Baking
- Turn the dough out onto a lightly floured countertop. Gently pat and fold the dough over itself 2 or 3 times to create flaky laminated layers. Shape into an 8-inch round disc about 1 inch thick.
- Using a sharp chef's knife or bench scraper, cut the disc into 8 equal triangular wedges. Place wedges onto the prepared baking sheet, spacing them 2 inches apart.
- Brush the tops of each wedge lightly with 2 tbsp heavy cream and sprinkle generously with coarse turbinado sugar. Place the baking sheet in the freezer for 10 minutes to re-chill the butter for maximum rise.
- Bake at 400°F (200°C) for 16 to 18 minutes until the tops and edges are deeply golden brown and the centers are set. Transfer to a wire cooling rack.
Glazing & Serving
- While scones cool for 10 minutes, whisk together powdered sugar, pure maple syrup, heavy cream, vanilla, and a pinch of salt until smooth and opaque.
- Use a spoon or small whisk to drizzle generous ribbons of glaze over the warm scones. Let the glaze set for 5 minutes before serving warm with coffee or tea.
