Ingredients
  

Salad Base
  • 4 cups mixed greens such as arugula and spinach
  • 2 medium peaches halved and pitted
  • 4 oz goat cheese crumbled
  • 1/4 cup walnuts toasted and chopped
Vinaigrette
  • 3 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp honey
  • 1 clove garlic minced

Method
 

Prepare the Peaches
  1. Preheat the grill to medium-high heat.
  2. Halve the peaches and remove the pits.
  3. Brush the cut sides of the peaches with olive oil.
  4. Place the peaches cut-side down on the grill and cook for 3-4 minutes until grill marks appear.
Make the Vinaigrette
  1. In a mixing bowl, whisk together olive oil, balsamic vinegar, honey, minced garlic, salt, and pepper.
Assemble the Salad
  1. In a large bowl, combine mixed greens and grilled peaches.
  2. Drizzle with vinaigrette and toss gently to combine.
  3. Top with crumbled goat cheese and toasted walnuts.
  4. Serve immediately on salad plates.
