Ingredients
  

Taco Filling
  • 1 lb ground turkey lean
  • 1 tbsp olive oil for cooking
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 tbsp taco seasoning store-bought or homemade
  • 1 cup tomato sauce or diced tomatoes
  • 1 cup black beans cooked, drained
  • 1 cup corn canned or frozen
Taco Assembly
  • 8 small taco shells soft or hard
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1/2 cup sour cream optional
  • 1/4 cup fresh cilantro chopped, optional

Method
 

Prepare the Filling
  1. Heat olive oil in a skillet over medium heat. Add diced onion and cook until translucent, about 3-4 minutes.
  2. Add minced garlic and cook for an additional 1 minute until fragrant.
  3. Add ground turkey to the skillet, breaking it apart with a spatula. Cook until browned and cooked through, about 5-7 minutes.
  4. Stir in taco seasoning, tomato sauce, black beans, and corn. Simmer for 5 minutes until heated through.
Assemble the Tacos
  1. Warm taco shells according to package instructions.
  2. Fill each taco shell with the turkey mixture.
  3. Top with shredded lettuce, diced tomatoes, shredded cheese, sour cream, and cilantro as desired.
