Ingredients
  

Chicken
  • 1 pound boneless, skinless chicken breasts cut into bite-sized pieces
Marinade
  • 2 tablespoons soy sauce low sodium
  • 1 tablespoon cornstarch
  • 1 tablespoon sesame oil
Sauce
  • 1 cup chicken broth low sodium
  • 1 tablespoon honey
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon ginger grated
  • 2 cloves garlic minced
Vegetables
  • 1 cup broccoli florets
  • 1 bell pepper sliced any color
  • 1 carrot sliced
Garnish
  • 2 tablespoons green onions sliced
  • 1 tablespoon sesame seeds optional

Method
 

Marinate the Chicken
  1. In a mixing bowl, combine soy sauce, cornstarch, and sesame oil. Add chicken pieces and toss to coat. Let marinate for 15 minutes.
Prepare the Sauce
  1. In a separate bowl, whisk together chicken broth, honey, lemon juice, lemon zest, ginger, and garlic. Set aside.
Cook the Chicken
  1. Heat a skillet over medium-high heat. Add marinated chicken and cook until browned and cooked through, about 5-7 minutes.
Add Vegetables
  1. Add broccoli, bell pepper, and carrot to the skillet. Stir-fry for 3-4 minutes until vegetables are tender-crisp.
Combine and Serve
  1. Pour the sauce over the chicken and vegetables. Stir to combine and cook for an additional 2-3 minutes until the sauce thickens. Garnish with green onions and sesame seeds before serving.
