Ingredients
  

Rice Base
  • 1 cup long-grain white rice rinsed and drained
  • 1 cup chicken broth or vegetable broth for a vegetarian option
  • 1 medium onion diced
  • 1 clove garlic minced
  • 1 medium red bell pepper diced
  • 1 medium tomato diced
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt to taste
  • 1 cup frozen peas optional

Method
 

Cooking Instructions
  1. Set the Instant Pot to 'Sauté' mode and heat the olive oil. Add the diced onion, garlic, and red bell pepper. Sauté for about 3-4 minutes until softened.
  2. Add the rinsed rice to the pot and stir for another 1-2 minutes to toast the rice slightly.
  3. Stir in the chicken broth, diced tomato, cumin, paprika, and salt. If using, add the frozen peas.
  4. Close the lid of the Instant Pot and set it to 'Manual' mode on high pressure for 6 minutes.
  5. Once the cooking time is complete, allow for a natural pressure release for 10 minutes, then quick release any remaining pressure.
  6. Fluff the rice with a fork and serve warm.
