Ingredients
  

Pasta and Vegetables
  • 8 oz rotini pasta or any short pasta
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 cup bell pepper diced
  • 1 cup black olives sliced
  • 1 cup salami diced
  • 1 cup mozzarella cheese cubed
Dressing
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 tsp Italian seasoning
  • 1 clove garlic minced
  • 1 tsp salt
  • 1/2 tsp black pepper

Method
 

Prepare the Pasta
  1. Cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
Mix the Salad
  1. In a large mixing bowl, combine the cooked pasta, cherry tomatoes, cucumber, bell pepper, black olives, salami, and mozzarella cheese.
Make the Dressing
  1. In a separate bowl, whisk together the olive oil, red wine vinegar, Italian seasoning, minced garlic, salt, and black pepper.
Combine
  1. Pour the dressing over the pasta salad and toss to combine. Adjust seasoning if necessary.
Chill and Serve
  1. Refrigerate the salad for at least 30 minutes before serving to allow flavors to meld.
