Method
Prepare the Lamb
- Preheat the oven to 325°F (160°C). Season the lamb shanks with salt and pepper.
- In a Dutch oven, heat olive oil over medium-high heat. Brown the lamb shanks on all sides, then remove and set aside.
Cook the Vegetables
- In the same pot, add onion, celery, carrots, and garlic. Sauté until softened, about 5-7 minutes.
Deglaze and Braise
- Pour in the white wine to deglaze the pot, scraping up any browned bits. Let it simmer for 2-3 minutes.
- Add the beef broth, crushed tomatoes, thyme, rosemary, and bay leaf. Return the lamb shanks to the pot.
- Bring to a simmer, cover, and transfer to the oven. Braise for 2-2.5 hours, until the meat is tender.
Prepare Gremolata
- In a small bowl, mix together lemon zest and parsley. Set aside.
Serve
- Once cooked, remove the lamb shanks from the pot. Serve with the sauce and sprinkle with gremolata.
