Ingredients
  

Lamb Shanks
  • 4 pieces lamb shanks about 1.5 pounds each
Vegetables
  • 2 tablespoons olive oil for browning
  • 1 large onion diced
  • 2 stalks celery diced
  • 2 carrots carrots diced
  • 4 cloves garlic minced
Liquids
  • 1 cup dry white wine such as Sauvignon Blanc
  • 2 cups beef broth or lamb broth
  • 1 cup canned tomatoes crushed
Herbs and Spices
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf bay leaf
  • Salt to taste
  • Black pepper to taste
Gremolata
  • 1 tablespoon lemon zest
  • 2 tablespoons fresh parsley chopped

Method
 

Prepare the Lamb
  1. Preheat the oven to 325°F (160°C). Season the lamb shanks with salt and pepper.
  2. In a Dutch oven, heat olive oil over medium-high heat. Brown the lamb shanks on all sides, then remove and set aside.
Cook the Vegetables
  1. In the same pot, add onion, celery, carrots, and garlic. Sauté until softened, about 5-7 minutes.
Deglaze and Braise
  1. Pour in the white wine to deglaze the pot, scraping up any browned bits. Let it simmer for 2-3 minutes.
  2. Add the beef broth, crushed tomatoes, thyme, rosemary, and bay leaf. Return the lamb shanks to the pot.
  3. Bring to a simmer, cover, and transfer to the oven. Braise for 2-2.5 hours, until the meat is tender.
Prepare Gremolata
  1. In a small bowl, mix together lemon zest and parsley. Set aside.
Serve
  1. Once cooked, remove the lamb shanks from the pot. Serve with the sauce and sprinkle with gremolata.
