Ingredients
  

Ice Cream Base
  • 8 oz Cream Cheese softened
  • 1 cup Heavy Cream
  • 1/2 cup Granulated Sugar
  • 1 tsp Vanilla Extract
  • 1/4 cup Lemon Juice freshly squeezed
  • 1 tbsp Lemon Zest
Blueberry Swirl
  • 1 cup Fresh Blueberries
  • 1/4 cup Granulated Sugar
  • 1 tbsp Lemon Juice for flavor

Method
 

Prepare Ice Cream Base
  1. In a mixing bowl, beat the softened cream cheese until smooth.
  2. Add the heavy cream, granulated sugar, vanilla extract, lemon juice, and lemon zest. Whisk until fully combined and smooth.
Make Blueberry Swirl
  1. In a small saucepan, combine the fresh blueberries, granulated sugar, and lemon juice.
  2. Cook over medium heat until the blueberries burst and the mixture thickens, about 5-7 minutes. Let it cool.
Combine and Freeze
  1. Pour the ice cream base into the ice cream maker and churn according to the manufacturer's instructions.
  2. Once churned, layer the blueberry swirl into the ice cream and gently fold it in to create a marbled effect.
  3. Transfer the ice cream to a freezer-safe container and freeze for at least 4 hours or until firm.
