Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2 tbsp poppy seeds
Wet Ingredients
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter melted
  • 2 large eggs
  • 1 cup buttermilk
  • 1 tbsp lemon zest
  • 1/4 cup fresh lemon juice

Method
 

Prepare the Muffin Batter
  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large mixing bowl, whisk together the dry ingredients: flour, baking powder, baking soda, salt, and poppy seeds.
  3. In another bowl, mix the granulated sugar and melted butter until combined.
  4. Add the eggs, buttermilk, lemon zest, and lemon juice to the sugar mixture and whisk until smooth.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
Bake the Muffins
  1. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  2. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  3. Remove from the oven and let the muffins cool in the tin for 5 minutes before transferring to a cooling rack.
