Prepare the Muffin Batter
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large mixing bowl, whisk together the dry ingredients: flour, baking powder, baking soda, salt, and poppy seeds.
- In another bowl, mix the granulated sugar and melted butter until combined.
- Add the eggs, buttermilk, lemon zest, and lemon juice to the sugar mixture and whisk until smooth.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
Bake the Muffins
- Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Remove from the oven and let the muffins cool in the tin for 5 minutes before transferring to a cooling rack.
