Ingredients
  

Potatoes
  • 2 pounds Yukon Gold potatoes or any waxy potatoes
Toppings
  • 1 cup shredded cheddar cheese
  • 1 cup cooked bacon, crumbled
  • 1/4 cup sour cream
  • 1/4 cup green onions, sliced
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Oil
  • 2 tablespoons olive oil

Method
 

Prepare the Potatoes
  1. Boil the potatoes in salted water until fork-tender, about 15-20 minutes. Drain and let cool slightly.
Smash and Season
  1. Preheat the skillet over medium heat and add olive oil. Once hot, place the boiled potatoes in the skillet and gently smash them with a masher.
  2. Sprinkle garlic powder, salt, and pepper over the smashed potatoes.
Add Toppings
  1. Top the smashed potatoes with cheddar cheese and crumbled bacon. Cook for an additional 5-10 minutes until the cheese is melted and the potatoes are crispy.
Serve
  1. Garnish with sour cream and sliced green onions before serving.
