Ingredients

Dry Ingredients
  • 1 cup all-purpose flour
  • 2 tbsp matcha powder adjust for stronger flavor
  • 2 tbsp sugar or to taste
  • 1 tbsp baking powder
  • 1/2 tsp salt
Wet Ingredients
  • 1 cup milk or non-dairy alternative
  • 1 large egg
  • 1 medium ripe banana mashed
  • 2 tbsp melted butter or coconut oil

Method

Prepare the Batter
  1. In a mixing bowl, whisk together the dry ingredients: flour, matcha powder, sugar, baking powder, and salt.
  2. In another bowl, combine the wet ingredients: milk, egg, mashed banana, and melted butter. Mix well.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
Cook the Pancakes

Serve
  1. Stack the pancakes on a plate and serve warm with maple syrup, fresh fruit, or whipped cream.
