Ingredients
  

Pudding Base
  • 1 cup Almond milk or any plant-based milk
  • 1/4 cup Chia seeds
  • 2 tablespoons Maple syrup or sweetener of choice
  • 1 teaspoon Matcha powder adjust to taste
  • 1/2 teaspoon Vanilla extract
Toppings
  • 1 cup Mixed berries strawberries, blueberries, raspberries
  • 2 tablespoons Coconut flakes optional

Method
 

Prepare the Pudding
  1. In a mixing bowl, whisk together almond milk, chia seeds, maple syrup, matcha powder, and vanilla extract until well combined.
  2. Let the mixture sit for 5 minutes, then whisk again to prevent clumping.
  3. Cover the bowl and refrigerate for at least 4 hours or overnight until it thickens.
Serve
  1. Once the pudding has thickened, stir it well and divide it into serving glasses.
  2. Top with mixed berries and coconut flakes if desired.
  3. Enjoy chilled.
