Matcha Mousse
  • 2 tablespoons matcha powder high quality
  • 1 cup heavy cream chilled
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon gelatin powder dissolved in 2 tablespoons of water
Whipped Cream Topping
  • 1 cup heavy cream chilled
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
Garnish
  • 1 tablespoon matcha powder for dusting
  • 4 pieces fresh berries for topping

Method
 

Prepare Matcha Mousse
  1. In a mixing bowl, whisk together the matcha powder and granulated sugar.
  2. In another bowl, whip the heavy cream until soft peaks form.
  3. Gently fold the whipped cream into the matcha mixture until combined.
  4. Add the dissolved gelatin and vanilla extract, folding until smooth.
Assemble Parfaits
  1. Spoon the matcha mousse into serving cups, filling them halfway.
  2. Chill in the refrigerator for at least 30 minutes to set.
  3. Once set, whip the heavy cream for the topping with powdered sugar and vanilla until soft peaks form.
  4. Top the mousse with whipped cream and garnish with fresh berries and a dusting of matcha powder.
