Ingredients
  

Matcha Mousse
  • 2 tablespoons matcha powder high quality
  • 1 cup heavy cream chilled
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon gelatin powder optional for stability
  • 2 tablespoons water for gelatin
Whipped Cream Topping
  • 1 cup heavy cream chilled
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
Garnish
  • 1 tablespoon matcha powder for dusting
  • 4 pieces fresh berries for decoration

Method
 

Prepare Matcha Mousse
  1. In a mixing bowl, whisk together the matcha powder and granulated sugar.
  2. In a separate bowl, whip the heavy cream until soft peaks form.
  3. Gently fold the whipped cream into the matcha mixture until combined.
  4. If using gelatin, dissolve it in warm water and fold it into the mousse mixture.
Assemble Parfaits
  1. Spoon a layer of matcha mousse into the bottom of each serving cup.
  2. Add a layer of whipped cream on top of the mousse.
  3. Repeat the layers until the cups are filled, finishing with whipped cream.
Garnish and Serve
  1. Dust the top of each parfait with matcha powder and add fresh berries for garnish.
  2. Chill in the refrigerator for at least 30 minutes before serving.

Notes

For a vegan version, substitute heavy cream with coconut cream and use agar-agar instead of gelatin.
