Method
Prepare the Eggplant
- Sprinkle the cubed eggplant with salt and let it sit for about 30 minutes to draw out moisture.
- Rinse the eggplant cubes under cold water and pat dry with a paper towel.
Cook the Sauce
- In a large skillet, heat olive oil over medium heat.
- Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for another minute.
- Add the cumin, coriander, paprika, and cinnamon, and cook for 1-2 minutes until fragrant.
- Pour in the crushed tomatoes and vegetable broth, and stir to combine.
- Add honey, black pepper, and cayenne pepper if using. Bring to a simmer.
Combine and Cook
- Add the prepared eggplant to the skillet, stirring to coat with the sauce.
- Cover and cook on low heat for about 30 minutes, stirring occasionally, until the eggplant is tender.
- Taste and adjust seasoning if necessary.
Serve
- Garnish with chopped fresh parsley before serving.
- Serve hot with couscous or bread.
