Ingredients
  

Soup Base
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 carrots carrots, diced
  • 2 celery stalks celery, diced
  • 1 cup potatoes, diced Yukon Gold or Russet
  • 6 cups chicken broth low sodium
  • 2 cups rotisserie chicken, shredded skin removed
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
Garnish
  • 1 tablespoon fresh parsley, chopped for garnish

Method
 

Prepare the Soup
  1. In a large pot, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 5 minutes.
  2. Add minced garlic, diced carrots, and diced celery. Cook for an additional 5 minutes, stirring occasionally.
  3. Stir in the diced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer for 15 minutes or until potatoes are tender.
  4. Add the shredded rotisserie chicken, heavy cream, thyme, and basil. Stir well and simmer for another 5 minutes.
  5. Season with salt and pepper to taste. Remove from heat.
Serve
  1. Ladle the soup into bowls and garnish with chopped parsley before serving.
