Ingredients
  

Salad Base
  • 4 medium potatoes peeled and diced
  • 1 cup orange segments fresh or canned
  • 1 cup celery chopped
  • 1/2 cup red onion finely chopped
Dressing
  • 1/4 cup olive oil
  • 2 tablespoons orange juice freshly squeezed
  • 1 tablespoon honey optional
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste
Garnish
  • 2 tablespoons fresh parsley chopped

Method
 

Prepare the Potatoes
  1. Boil the diced potatoes in salted water until tender, about 15-20 minutes. Drain and let cool.
Make the Dressing
  1. In a mixing bowl, whisk together olive oil, orange juice, honey, Dijon mustard, salt, and black pepper until well combined.
Combine Ingredients
  1. In a large bowl, combine the cooled potatoes, orange segments, celery, and red onion. Pour the dressing over the salad and toss gently to combine.
Serve
  1. Garnish with chopped parsley and serve chilled or at room temperature.
